摘要: 用粘度速测仪(RVA)测定了72个水稻品种的淀粉粘滞性谱(RVA谱),发现不同亚种之间RVA谱的特征存在明显差异。表观直链淀粉含量(Apparent Amylose Content AAC)相似的水稻品种,崩解值大小依次为爪哇稻>粳稻>粕稻,而消减值呈相反趋势。在43个釉稻品种中,AAC与RVA谱的热浆粘度、冷胶粘度、消减值和回复值均呈极显著正相关,相
